Serves 2-4 and makes six tacos.

You will also need a little cooking oil, salt and black pepper.

Prepare the pink onion

Thinly slice the red onion and divide it in half. Place one half in a small bowl with the lime juice and a pinch of salt. Mix well and leave to pickle while everything else cooks.

Barbecue the aubergines

Prick the aubergines several times with a fork. Place them whole on the barbecue over a medium heat and cook for approximately 20–30 minutes, turning regularly, until the skins are blackened and the centres feel completely soft.

Remove them from the barbecue and leave them until cool enough to handle.

Prepare the filling

Place a barbecue-safe frying pan over a medium heat. Add a little oil and the remaining sliced onion, then cook for 5–8 minutes until softened.

Split the aubergines and scoop the soft flesh into the pan, discarding the blackened skins. Drain the black beans and add them to the aubergine.

Stir in the jerk seasoning paste a little at a time, according to how spicy you like it. Season with salt and pepper, then cook for a further 10–15 minutes, stirring occasionally, until the mixture is rich, thick and piping hot.

Warm the tortillas

Place each tortilla directly onto the barbecue for approximately 20–30 seconds on each side. They should be warm and lightly marked but still soft enough to fold.

Build your tacos

Fill each tortilla with shredded Little Gem lettuce and the warm jerk aubergine and black bean mixture. Finish with guacamole and the drained pink pickled onion.

Fold gently and enjoy immediately.
